The Guacamole at True Food Kitchen is scrumdillyicious!

Being a cancer survivor I try to eat healthy. I truly do. It’s been a struggle as of late because I’m a bit of a foodie. However, I definitely know more about nutrition than I did pre-cancer. You’ll see me change up my eating patterns. Sometimes I’ll go vegan for a spell, pescatarian, or flexitarian. One of the biggest challenges when you’re trying to eat healthy is eating out but restaurants that offer clean foods (organic, non-GMO, grass fed, free-range, gluten-free, etc.) are on the rise and make it a lot easier. Enter True Food Kitchen! They have something for everyone. Their menu calls out vegan, vegetarian, and gluten-free entrees. The ingredients are always in season so you won’t find the same thing on the menu in the summer that you will in the fall. That’s why I make sure to go in the summer to get their Kale Guacamole.

I’ve never had guacamole like this before. I’m used to having tomatoes, onions, garlic, cilantro, and lime in my guac. I don’t think I’ve ever had a guac that steered too far away from those ingredients. So when I saw two of my favorite green foods, avocados and kale, in the same dish, I had to try it. I love grapefruit and sunflowers seeds too. I just never thought of putting all of these ingredients together to make guacamole. The featured ingredients of this guacamole extraordinaire are pink grapefruit, cilantro, roasted poblano, sunflower seeds with pita chips for dipping (or scooping if you will). The pita chips are crisp and have a toasty flavor to them. The pita chips with the guac are a perfect marriage. I just love taking a pita chip, getting a scoop of guac and seeing if I got a little piece of a grapefruit segment. Very refreshing. Tastes like summer.
